Creating authentic Wisconsin flavors

At PJ’s, we pride ourselves on dishes made with fresh, local ingredients with plenty of Wisconsin charm. One of our favorite tools for elevating a dish from “Yum” to “I’m coming back tomorrow” is our wood-fire oven.

The unique smoky flavor is like a Wisconsin campfire, and that’s on purpose. The wood we use in the oven comes from a local vendor, so the flavor profile it creates is totally unique to PJ’s.

Of course, we use the wood oven for our pizzas, but we also frequently serve fire-roasted vegetables, and use the oven for searing and roasting meat. Seasonal menus encourage us to innovate and find new ways to prepare the freshest ingredients. You’ve never had Brussels sprouts like this!

Wood-oven pizza is a classic. At PJ’s, we seek to blend local flavor inspiration with techniques that make the most of the wood-fire cooking.

Our California-style crust bubbles up perfectly in the oven. The result is equally crispy and chewy—an excellent base for seasonal, mouthwatering toppings.
