Originally from New Mexico, Chef Roger combines his Southwestern upbringing with classical culinary education and extensive travel to create dishes with a clarity of flavor and a deceptive simplicity—cooking that only thoughtful experience and well-honed technique can produce. Chef Roger has worked in the Northeast, Florida, Texas and his native New Mexico—allowing him to develop a deep appreciation for a wide variety of cooking styles and restaurant experiences.
“While the popular image of a restaurant chef leans toward raging egos and extravagant personalities, I prefer to let my cooking do the talking for me,” commented Chef Roger. “My concern is focused on providing all of our guests a first-rate experience while working with a collaborative team in an upbeat, positive culture.”
Chef Roger’s arrival at PJ’s – SentryWorld represents a homecoming of sorts for his family.
